The beauty of stuffed peppers is they are so adaptable. Not a fan of white rice? Substitute brown, wild or quinoa. Want to make it vegetarian? Use black beans and vegetable broth instead. They are so many varieties but this saucy beef version is my favorite.
Who can complain about guilt free comfort food?
Most recipes skip this step but I love to dust the inside of the peppers with freshly ground salt before adding in the meat and rice filling. The extra salt on the inside really makes the filling pop.
It’s important to pour extra chicken stock in the bottom of your casserole dish and cover the peppers with aluminum foil before placing them into your oven. Trust me, it makes them extremely juicy without compromising the crisp texture we want from the pepper.
