Peanut butter protein balls are the perfect healthy snack that adults and kids both rave about. They’re delicious, simple to make and taste like cookie dough.
There are many variations known as power balls, energy bites but I believe we’ve perfected the protein peanut butter ball. It’s a recipe my toddler willingly eats and my husband reminds me of when we’re running low.
Peanut butter protein balls require no baking and can be stored easily in the fridge for a week or up to 3 months in the freezer. Take them out 15 minutes prior to eating and voila!
They make a quick breakfast, pre-workout/post workout bite or after school snack.
These protein balls are packed full of protein and nutrition to keep you full and make healthy snacking taste the complete opposite. Peanut butter protein balls are the sweet cheat you always crave with one exception. This time feel free to ditch the guilt.
There a few secrets to a great protein ball.
First, it’s important to pulse your oats in a food processor to break them down. We use the KitchenAid Mini on the “puree” mode for 10 seconds. This will give your protein balls a very subtle and easy to eat consistency.
Second is to use an Electric Mixer or KitchenAid Stand Mixer. You’ll notice immediately that it makes the world of a difference. You can still whip these up by hand but it may take you a bit longer. Using a mixer will give you a very fluffy texture and consistently mixed “dough.” I don’t own the KitchenAid stand (yet) and I use this electric mixer here for this recipe.
Third, use a baking sheet for a fuss-free clean up and this cookie scoop to ensure each protein ball is the same size.
