I love having Healthy Pork Gyros on our weekly menu because they’re an inexpensive, quick dinner that can be cooked and ready in 15 minutes.
Healthy Pork Gyros are delicious and easy to assemble! I like to pair them with our delicious 5-minute tzatziki recipe (which is included below) but if you’re short on time you can buy a pre-made one from the store.
Don’t eat pork? That’s okay because this marinade is flexible. Try it with chicken breast, thighs or flank steak.

A full pork tenderloin from Costco costs $18 and we use half to feed our family of 4. That also leaves us with 2 days of leftovers for lunches. The MOST IMPORTANT step when buying a tenderloin is to completely trim and remove the layer of fat on the bottom (the thick white part). If it stays on, it makes it almost impossible to cook through.
The marinade is made up of 6 simple ingredients we always have in our pantry and packs a lot of flavor in JUST 30 MINUTES! I prepare the marinade the night before to save time because walking in the door at dinner time is always crazy around here.
Marinade Ingredients: Olive oil, apple cider vinegar, garlic, oregano, basil and paprika. That’s it!
After you’ve marinated the pork for 30 minutes you’re ready to start cooking. I like to make my marinade and tzatziki at the same time. That way, all I have to worry about is cooking the pork and baking the pita. Easy peasy!
Using cast iron, turn your pan on high heat. When it’s up to temperature, place your pork evenly throughout the pan and cook for 5 minutes per side. Let the pork rest an additional 5 minutes before serving. When you let it rest it locks in all the succulent juices, making it extremely tender.
The cast iron skillet has become an essential item in our kitchen because the pan itself distributes and maintains heat so well. There are tons of brands but the Utopia skillet from Amazon is under $25 and a great choice.
Pita Tip: Take your Gyro to the next level and sprinkle your pita base with garlic-salt and paprika. The flavor packs an unreal punch!
I wrapped the Gyro in parchment paper with a string because it looks pretty but most of the time we use tin foil because it’s faster and more convenient.
